Other interesting info – 2025 update
The Chicken Shack STX is owned and run by Millin Diaz, a local St. Croix legend. He gets there every day at 6 am (this is when the bar opens 😂). Then at 7 am, the cooking starts. They cook over wood charcoal on a self-made system which is basically a series of pipes that are rotated by motors from old dryers. Pretty ingenious, and the proof is in the amazing flavor.
Typically La Reine Chicken Shack STX cooks over 20 cases of chicken a day — that’s 300 whole birds every day, which proves its popularity.
First orders are usually served around 10-10:30 am.
